Clean eating rosemary butternut squash soup 17th october 2016 by the kitchen shed 5 comments i am making the most of the brilliant butternut squash whilst it is in season and putting it in a soup is always a winner in our house.. The humble onion squash, what a beauty! i seriously have a thing for autumn squash. i think they are fascinating. so strong and hardy, in all shapes, colours and sizes they are a wonder of nature.. Place the butternut squash on the pan and drizzle each half with just enough olive oil to lightly coat the squash on the inside (about 1 teaspoon each). brush the oil over the inside of the squash and sprinkle each half lightly with salt. turn the squash face down and roast until it is tender and completely cooked through, about 35-40 minutes..
